Makes 4-5 mini pancakes

 

Baby Cakes are a staple for Laura's 2 year old Cleo. This simple 4 ingredient breakfast is packed with nutrients and energy for your growing little one. Pancakes are a great place to hide some dark leafy greens and it makes for a bright and cheery meal or snack. Serve with banana and berries.

Ingredients:

1 banana

2-3 tbsp whole rolled oats

1 egg

6-7 spinach leaves

Directions:

  1. Combine all ingredients in a blender, blend until smooth.

  2. Warm a pan with 1 tbsp butter, ghee or coconut oil.

  3. Drop 4 - 5 small pancake rounds in the pan.

  4. As the batter heats it will become easy to remove from the pan and flip. Flip pancake until both sides are golden brown.

  5. Cut and serve warm to your toddler. Add some berries or bananas or topping of your choice.

  1. Add ingredients to blender, blend until smooth.

2. pour batter onto pan in small pancake sizes.

3. When pancakes start bubbling and you can flip, flip them over.

4. let them cool, cut into bite sized pieces and serve.

5. Yummy! Served with melon and full fat plain yogurt. Delish.
