This is our Fig and Goat Cheese Toast – a recipe that was very popular as either a breakfast bite or lunch side when we had our vegetarian restaurant. The layers of flavors from savory truffle and garlic, to tangy goat cheese, to sweet honey and fig, with a little salty pinch and a nutty depth with almonds, make every bite TO DIE FOR. Honestly, you will want to eat both slices, and you should!! 

Now, if you are missing seeing some green with this recipe, toss some fresh arugula or sprouts on top for a fresh kick. For those of you with a gluten allergy, just swap the toast for your fav GF brand. YUM, enjoy!

Fig and Goat Cheese Toast Recipe:

(Makes 2)

Ingredients:

2 slices of sourdough bread

2 Tbsp truffle oil

1 clove of garlic, minced

¼ cup plain goat cheese

1 - 2 Tbsp raw honey

6 dried figs, de-stemmed, sliced

2 Tbsp almond pieces

1 tsp fennel seed for sprinkling

A pinch of Himalayan salt

Instructions:

In a small dish, combine truffle oil and minced garlic and spread over 1 side of each toast. Warm a skillet over medium heat and carefully toast each slice, oil side down first until golden brown and crisp, and then flip to lightly toast the other side. Remove from heat. Spread the goat cheese over each slice of toast, drizzle with honey, cover with fig slices, and then sprinkle over fennel seed, almond pieces, and salt. Add an extra drizzle of truffle oil or honey if desired at the end. Optional: top this toast with a small handful of arugula or greens of your choice.
