KYN Nut and

Seed Granola

Recipe

Vegan & Gluten-Free

Serves 10 - 12

This Nut and Seed Granola is next level delicious and properly addictive. Taking a spin off traditional granola with oats, we use purely nuts and seeds. This means you get a healthy dose of protein and essential fatty acids in your granola, so it can really act as a balanced snack or part of a breakfast meal. We add warming spices like cinnamon and clove and nourishing ghee and honey are well incorporated so every cluster is flavorful.

This recipe has been in our lives for over a decade now. It was originally inspired by my time working at a boutique spa where the guests were offered complimentary granola in all of the relaxation areas. Along with the guests, I was hooked on this rocket fuel and usually snuck my own little portions to keep me going through the long afternoons of facials and massage.

When my sister and I started our wellness retreats, we were able to recreate the granola experience and it later became a bestseller at our cafe. We love the flavors and the way our homes smell while baking. Enjoy this granola as a snack or add it to yogurt and smoothie bowls.

We hope this recipe brings as much joy into your kitchen as it does in ours!

Ingredients:

1/2 cup pumpkin seeds

1/2 cup sunflower seeds

1 cup pecans pieces

1 cup slivered almonds

1/2 cup cashew pieces

1 cup coconut flakes

3 tbsp maple syrup

3 tbsp ghee or coconut oil

1/2 tbsp cinnamon

1/4 tsp sea salt

1/4 tsp nutmeg

1/8 tsp clove

Instructions:

Combine all ingredients in a bowl, add to a greased baking sheet and bake at 350F for 10 minutes, or until golden.

  1. You may need to turn the granola mixture for even baking halfway through.

  2. Let it cool and store in an airtight container like a mason jar in your pantry or fridge.

  3. Note: while it stores for up to 3 or 4 weeks, you will definitely empty your jar long before then!
