A glass bowl containing a salad with boiled eggs, beets, Brussels sprouts, pecans, quinoa, and greens.

This salad or bowl is so vibrant and so beautifully balanced with flavors, colors and textures as well as dense nutrition. Make a salad a little more by adding in a grain, nuts or seeds, a protein, and some element of cooked and fermented veggies. This recipe uses our quick pickle beets.

Recipe

Ingredients:

1 handful arugula

1/2 cup quinoa

1/2 cup pickled beets

roasted Brussel sprouts or other veg

1/4 cup goat cheese

1/4 cup pecans, broken

1-2 boiled eggs (optional)

sea salt or truffle sea salt

drizzle of balsalmic vinegar or glaze

drizzle of avocado oil

Directions:

Add quinoa, arugula and roasted veg to your bowl and combine. Top with beets, goat cheese, pecans and drizzle your oil and vinegar. Optional, add 1-2 boiled eggs. Add a few pinches of sea salt and enjoy!
