This Overnight Oat recipe is easy, nutritious and our go-to breakfast and snack, especially on busy weeks when finding time for breakfast is challenging. This meal is versatile, tasty and so easy to balance fibre, fat and protein. We top ours with fresh fruit and our homemade nut & seed granola.

Ingredients:

5 cups whole rolled, GF oats

5 cups plant milk (almond or coconut)

5 Tbsp chia seed

5 Tbsp maple syrup (optional)

10 Tbsp nut or seed butter

Toppings: fresh fruit, hemp seeds, pumpkin seeds, etc.

Instructions:

In a bowl, combine all ingredients and allow to sit overnight. Stir in the morning and add toppings of your choice. Prepare in airtight containers or mason jars for easy transport if you are on the go!
